  • Water 4 l
  • Parsley Root 1 kg sliced
  • Carrot 1 kg sliced
  • Bay Leaf 5 pc
  • Pepper 25 pc unmilled
  • Lemon 1 pc sliced
  • Yellow Onion 1 pc sliced
  • Salt 3 tbsp
  • Vinegar 8 tbsp
  • Leg of Lamb 1 pc whole
  • Lamb Shoulder 1 pc whole
  • Pepper 2 tsp
  • Garlic 5 clove cut into strips
  • Smoked Lard 100 g cut into cubes/diced
  • Beer 250 ml

Steps

  1. add Water 4 l Parsley Root 1 kg sliced Carrot 1 kg sliced Bay Leaf 5 pc Pepper 25 pc unmilled Lemon 1 pc sliced Yellow Onion 1 pc sliced Salt 2 tbsp Vinegar 8 tbsp in large pot
  2. boil up
  3. remove from heat
  4. add Leg of Lamb 1 pc whole Lamb Shoulder 1 pc whole
  5. rest in fridge 2 days
  6. drain in colander
  7. take Meat
  8. sprinkle with Salt 1 tbsp Pepper 2 tsp all sides
  9. push Garlic 5 clove cut into strips Smoked Lard 100 g cut into cubes/diced into holes cut with knife
  10. put Vegetables in baking tray
  11. put on it Meat
  12. bake 180 °C 2.5 h covered with aluminum foil
  13. in the meantime pour Beer 250 ml gradually
  14. bake 180 °C 30 min until it gets crispy uncovered
