Ingredients

  • Flour 100 g
  • Cocoa Powder 50 g
  • Baking Soda 0.5 tsp
  • Baking Powder 0.25 tsp
  • Salt 0.25 tsp
  • Kefir 90 g
  • Water 60 ml
  • Oil 27 g
  • Egg 1 pc
  • Sugar 150 g
  • Heavy Cream 600 g ice-cold
  • Chocolate 300 g dark
  • Salt 1 pinch

Steps

  1. mix Flour 100 g Cocoa Powder 50 g Baking Soda 0.5 tsp Baking Powder 0.25 tsp Salt 0.25 tsp
  2. whisk Kefir 90 g Water 60 ml Oil 27 g Egg 1 pc Sugar 150 g until foamy
  3. add mix Dry Mix carefully until combined
  4. put baking paper in baking tray
  5. put on it Mixture thin
  6. bake 175 °C preheated in oven (top and bottom) 8 min
  7. cool completely
  8. divide in 2 parts
  9. in the meantime put Heavy Cream 600 g ice-cold in medium pot
  10. whisk cook low heat until stiff
  11. melt Chocolate 300 g dark over steam
  12. take Sponge Cake Upper Half
  13. smear with Chocolate 50 g evenly
  14. rest 10 min in fridge
  15. take Chocolate rest
  16. add Salt 1 pinch
  17. cool a little bit
  18. add Whipped Cream 1/3
  19. mix carefully
  20. add Whipped Cream 2/3
  21. mix carefully
  22. take Upper Half
  23. cut in squares with hot knife
  24. take Lower Half
  25. smear with Chocolate Mix
  26. put on it Upper Half squares evenly
  27. rest 3 h in fridge
  28. cut when serving
