Ingredients

  • Eggplant 2 pc
  • Tomato 6 pc large
  • Yellow Squash 2 pc
  • Zucchini 2 pc
  • Basil 4 tbsp dried
  • Garlic 5 clove crushed/minced
  • Parsley Leaf 2 tbsp chopped
  • Thyme 2 tsp dried
  • Salt 1.5 tsp
  • Pepper 1.5 tsp
  • Olive Oil 6 tbsp
  • Yellow Onion 1 pc chopped
  • Bell Pepper 1 pc cut in pieces
  • Tomato 800 g sieved

Steps

  1. slice Eggplant 2 pc Tomato 6 pc large Yellow Squash 2 pc Zucchini 2 pc 1 mm
  2. mix Basil 2 tbsp dried Garlic 1 clove crushed/minced Parsley Leaf 2 tbsp chopped Thyme 2 tsp dried Salt 0.5 tsp Pepper 0.5 tsp Olive Oil 4 tbsp
  3. heat up Olive Oil 2 tbsp in large pan ovenproof 30 cm
  4. add Yellow Onion 1 pc chopped
  5. fry until it gets glassy
  6. add Garlic 4 clove crushed/minced Bell Pepper 1 pc cut in pieces
  7. fry until it softens
  8. add Salt 1 tsp Pepper 1 tsp
  9. add Tomato 800 g sieved
  10. cook until combined add Basil 2 tbsp dried
  11. remove from heat
  12. put on it Vegetables layered vertically
  13. sprinkle with Herb Mix
  14. bake 180 °C 1 h covered
  15. bake 180 °C 20 min uncovered
