Ingredients

  • Flour 6 tbsp
  • Baking Powder 2 tsp
  • Egg White 10 pc
  • Sugar 6 tbsp
  • Egg Yolk 10 pc
  • Apricot Jam 250 g
  • Sugar 270 g
  • Milk 500 ml
  • Walnut 50 g cut in pieces

Steps

    Sponge Cake

  1. mix Flour 6 tbsp Baking Powder 2 tsp
  2. whisk Egg White 6 pc add Sugar 6 tbsp slowly
  3. whisk until stiff
  4. add whisk Egg Yolk 6 pc slowly
  5. mix until mixed evenly
  6. add Flour Mix carefully
  7. put in baking tray 24 cm approx
  8. bake 175 °C preheated in oven (top and bottom) 30 min until needle test
  9. cool
  10. cut horizontally, in half
  11. take Lower Half
  12. smear with Apricot Jam 230 g
  13. put on it Upper Half
  14. cut in cubes small

    Sauce

  1. mix Egg Yolk 4 pc Sugar 40 g
  2. heat up Milk 500 ml don't boil
  3. add Egg Mix while stirring
  4. cook 0.5 min while stirring
  5. remove from heat

    Assembly

  1. form pyramid from cubes
  2. put on it Sauce between every layer
  3. rest 4 h

    Icing

  1. whisk Egg White 4 pc add Sugar 160 g Apricot Jam 20 g slowly
  2. whisk until stiff
  3. heat up Sugar 70 g in medium pot until it melts
  4. add Walnut 50 g cut in pieces
  5. mix
  6. cool
  7. crumble in mortar or with rolling pin
  8. take Cake
  9. smear with Egg White evenly
  10. put on it Walnut evenly
