Ingredients

  • Flour 350 g
  • Baking Powder 12 g
  • Salt 0.25 tsp
  • Egg White 4 pc
  • Sugar 320 g
  • Egg Yolk 4 pc
  • Vanilla Sugar 15 g
  • Lemon Peel/Zest 1 tsp grated
  • Sour Cream 100 ml
  • Oil 150 ml
  • Milk 900 ml
  • Vanilla Pudding 2 pack
  • Smetana (20%) 400 g
  • Apricot 12 pc canned strained halved
  • Cake Jelly 2 pack colorless
  • Sugar 4 tbsp
  • Water 500 ml

Steps

    Sponge Cake

  1. mix Flour 350 g Baking Powder 12 g Salt 0.25 tsp in large bowl
  2. whisk Egg White 4 pc slowly with hand mixer
  3. add Sugar 70 g
  4. whisk until stiff
  5. whisk Egg Yolk 4 pc with hand mixer until foamy
  6. add Vanilla Sugar 15 g Sugar 130 g
  7. mix until it dissolves
  8. add Lemon Peel/Zest 1 tsp grated Sour Cream 100 ml
  9. whisk until foamy
  10. add Oil 150 ml slowly
  11. whisk 2 min
  12. add Dry Mix Milk 50 ml
  13. mix
  14. add Milk 50 ml
  15. mix
  16. add Egg White 1/2
  17. mix slowly
  18. add Egg White 1/2
  19. mix slowly
  20. put baking paper in baking tray 25 x 35 cm
  21. put on it Mixture evenly
  22. bake 180 °C preheated in oven (top and bottom) 30 min until needle test
  23. rest

    Filling

  1. mix Vanilla Pudding 2 pack Sugar 120 g Milk 100 ml
  2. heat up Milk 700 ml in medium pot
  3. add Mixture
  4. cook low heat 1 min while stirring
  5. cool
  6. put in large bowl
  7. add Smetana (20%) 400 g

    Assembly

  1. take Sponge Cake
  2. smear with Filling evenly
  3. cool 1 h in fridge
  4. put on it Apricot 12 pc canned strained halved evenly cut side down
  5. mix Cake Jelly 2 pack colorless Sugar 4 tbsp Water 500 ml in small pot
  6. boil up
  7. cool
  8. take Cake smear with Jelly with brush
  9. rest in fridge
  10. cut into pieces when serving
