  • Flour 500 g
  • Egg Yolk 2 pc
  • Salt 1 tsp
  • Sugar 160 g
  • Vanilla Sugar 3 pack
  • Lemon Peel/Zest 1 tbsp grated
  • Butter 60 g melted
  • Yeast 20 g fresh
  • Milk 380 ml lukewarm
  • Flour 1 little bit
  • Cocoa Powder 2 tbsp
  • Milk 5 tbsp
  • Walnut 150 g ground
  • Raisin 3 tbsp

Steps

    Dough

  1. mix Flour 500 g Egg Yolk 1 pc Salt 1 tsp Sugar 60 g Vanilla Sugar 1 pack Lemon Peel/Zest 1 tbsp grated Butter 60 g melted Yeast 20 g fresh Milk 280 ml lukewarm
  2. knead with kneading machine
  3. sprinkle with Flour 1 little bit
  4. let rise covered 40 min

    Cocoa Filling

  1. mix Cocoa Powder 2 tbsp Milk 2 tbsp

    Wallnut Filling

  1. mix Walnut 150 g ground Raisin 3 tbsp Sugar 100 g Vanilla Sugar 1 pack
  2. add Milk 2 tbsp
  3. cook low heat until mixed evenly

    Assembly

  1. divide Dough in 2 parts
  2. roll (stretch) Dough half
  3. smear with Wallnut Filling
  4. roll up
  5. roll (stretch) Dough half
  6. smear with Cocoa Filling
  7. roll up
  8. twine Dough to stick together
  9. put baking paper in baking form round 25 cm
  10. put on it Dough round
  11. let rise 20 min covered
  12. mix Egg Yolk 1 pc Milk 1 tbsp
  13. take Dough
  14. smear with Egg Mix
  15. put in oven (convection) not preheated
  16. bake 170 °C 30 min
  17. in the meantime mix Milk 100 ml lukewarm Vanilla Sugar 1 pack
  18. take Cake
  19. put on it Milk Mix
  20. bake 170 °C 5 min
