  • Butter 50 g
  • Fallow Deer Leg 1.5 kg cleaned skinless
  • Yellow Onion 2 pc chopped
  • Bay Leaf 2 pc
  • Coriander Seed 6 pc
  • Peppercorn 6 pc
  • Rosemary 1 sprig
  • Salt 1.5 tbsp
  • Water 1.5 l hot
  • Red Wine 500 ml sweet
  • Cranberry Jam 1 tbsp
  • Honey 1 tbsp
  • Flour 1.5 tbsp

Steps

  1. heat up Butter 50 g in large pot ovenproof
  2. add Fallow Deer Leg 1.5 kg cleaned skinless
  3. fry 5 min all sides
  4. add Yellow Onion 2 pc chopped
  5. fry until it gets glassy
  6. add Bay Leaf 2 pc Coriander Seed 6 pc Peppercorn 6 pc Rosemary 1 sprig Salt 1.5 tbsp Water 1.5 l hot Red Wine 500 ml sweet
  7. bake 220 °C preheated in oven (convection) 20 min covered
  8. bake 190 °C 1 h uncovered
  9. bake 190 °C 30 min uncovered
  10. smear with Cranberry Jam 1 tbsp Honey 1 tbsp
  11. bake 190 °C 30 min uncovered
  12. remove Meat
  13. rest 20 min
  14. sieve Sauce in small pot
  15. cook low heat add Flour 1.5 tbsp gradually
  16. cook until it thickens
