Ingredients

  • Water 3 l
  • Salt 2 pinch
  • Orecchiette 300 g
  • Olive Oil 2 tbsp
  • Yellow Onion 1 pc chopped
  • Garlic 1 clove crushed/minced
  • Eggplant 500 g peeled cut into cubes/diced
  • Zucchini 500 g peeled cut into cubes/diced
  • Bell Pepper 200 g cut into cubes/diced
  • Tomato 250 g peeled cut into cubes/diced
  • Salt 0.5 tsp
  • Pepper 1 pinch
  • Parmesan 50 g grated

Steps

  1. boil up Water 3 l in large pot
  2. add Salt 2 pinch
  3. add Orecchiette 300 g
  4. cook until it softens
  5. drain

    Sauce

  1. heat up Olive Oil 2 tbsp in large pan
  2. add Yellow Onion 1 pc chopped
  3. fry until it gets glassy
  4. add Garlic 1 clove crushed/minced Eggplant 500 g peeled cut into cubes/diced Zucchini 500 g peeled cut into cubes/diced Bell Pepper 200 g cut into cubes/diced
  5. fry until it softens
  6. add Tomato 250 g peeled cut into cubes/diced Salt 0.5 tsp Pepper 1 pinch
  7. fry 10 min low heat

    Assembly

  1. mix Pasta Sauce
  2. sprinkle with Parmesan 50 g grated when serving
