Ingredients

  • Tomato 2 pc
  • Yellow Onion 1 pc
  • Garlic 2 clove
  • Olive Oil 2 tbsp
  • Rice 500 g
  • Jalapeño 1 pc seeded chopped
  • Broth 600 ml
  • Tomato Paste 1 tbsp
  • Salt 2 tsp
  • Coriander/Cilantro 1 bunch chopped
  • Pepper 1 tsp

Steps

  1. blend Tomato 2 pc Yellow Onion 1 pc Garlic 2 clove with blender
  2. heat up Olive Oil 2 tbsp in large pot ovenproof
  3. add Rice 500 g Jalapeño 1 pc seeded chopped
  4. fry 2 min medium heat while stirring
  5. add Broth 600 ml Tomato Mix Tomato Paste 1 tbsp Salt 1 tsp
  6. boil up
  7. bake 190 °C in oven (top and bottom) preheated covered until liquid absorbed approx 90 min
  8. add Coriander/Cilantro 1 bunch chopped
  9. add Salt 1 tsp Pepper 1 tsp if needed
