Ingredients

  • Ham 800 g with skin uncooked boneless
  • Salt 2 tsp
  • Pepper 2 tsp
  • Oil 3 tbsp
  • Rosemary 1 tbsp
  • Thyme 1 tbsp
  • Honey 1 tbsp
  • Broth 200 ml
  • Butter 40 g
  • Yellow Onion 1 pc chopped
  • Tomato Paste 1 tbsp
  • Bay Leaf 1 pc

Steps

  1. score Ham 800 g with skin uncooked boneless 2 cm
  2. sprinkle with Salt 2 tsp Pepper 2 tsp both sides in casserole dish
  3. smear with Oil 3 tbsp
  4. sprinkle with Rosemary 1 tbsp Thyme 1 tbsp
  5. bake 150 °C 2 h covered in oven (convection) preheated
  6. bake 200 °C 25 min skin side up uncovered in oven (convection)
  7. smear with Honey 1 tbsp side with skin
  8. bake 200 °C 10 min skin side up uncovered in oven (convection)
  9. take out
  10. remove Meat
  11. add Broth 200 ml in casserole dish
  12. dissolve Dripping
  13. melt Butter 40 g in medium pot
  14. add Yellow Onion 1 pc chopped
  15. fry until it gets glassy
  16. add Tomato Paste 1 tbsp fry
  17. fry 2 min
  18. add Dripping
  19. Bay Leaf 1 pc
  20. cook 10 min low heat
  21. slice Meat
  22. add Sauce when serving
