  • Duck Breast 2 pc
  • Duck Leg 4 pc
  • Salt 2 tbsp
  • Pepper 1 tbsp
  • Yellow Onion 2 pc cut in pieces
  • Red Onion 2 pc cut in pieces
  • Carrot 3 pc cut in pieces
  • Celery Root 1 pc small cut in pieces
  • Apple 2 pc cut in pieces
  • Garlic 4 clove
  • Rosemary 1 sprig
  • Allspice 1 tsp
  • Orange 3 pc sliced
  • Broth 100 ml
  • Red Wine 100 ml

Steps

  1. score Duck Breast 2 pc Duck Leg 4 pc skin and fat
  2. remove Fatty Parts
  3. sprinkle with Salt 2 tbsp Pepper 1 tbsp
  4. rest 30 min in fridge
  5. fry Fatty Parts in large pan until it gets crispy
  6. remove Fatty Parts
  7. add Breast skin side down
  8. fry high heat 1 min both sides
  9. remove Breast
  10. remove Fat keep
  11. put Yellow Onion 2 pc cut in pieces Red Onion 2 pc cut in pieces Carrot 3 pc cut in pieces Celery Root 1 pc small cut in pieces Apple 2 pc cut in pieces Garlic 4 clove
  12. put on it Fat
  13. put on it Rosemary 1 sprig Allspice 1 tsp
  14. put on it Breast Leg evenly skin side down
  15. put on it Orange 3 pc sliced evenly
  16. put on it Broth 100 ml
  17. bake 160 °C 1 h covered
  18. bake 170 °C 1 h covered
  19. turn/flip Breast Leg skin side up
  20. put on it Red Wine 100 ml
  21. bake 180 °C 1 h covered
  22. bake 190 °C 1 h uncovered until it gets crispy
