Ingredients

  • Beetroot 4 pc
  • Water 500 ml
  • Salt 2 tsp
  • Bay Leaf 2 pc
  • Cumin 1 tsp
  • Pepper 1 tsp unmilled
  • Olive Oil 1 tbsp
  • Yellow Onion 2 pc chopped
  • Garlic 4 clove chopped
  • Risotto Rice 300 g
  • Broth 1 l
  • Broth 1 little bit
  • Butter 100 g
  • Feta 100 g cut into cubes/diced
  • Chives 1 tbsp chopped

Steps

  1. add Beetroot 4 pc Water 500 ml enough to cover in medium pot
  2. add Salt 2 tsp Bay Leaf 2 pc Cumin 1 tsp Pepper 1 tsp unmilled
  3. cook medium heat covered 1 h until it softens
  4. remove Beetroot
  5. cool
  6. peel
  7. cut in cubes
  8. in the meantime heat up Olive Oil 1 tbsp in medium pot
  9. add Yellow Onion 2 pc chopped Garlic 4 clove chopped
  10. fry until it gets glassy
  11. add Risotto Rice 300 g
  12. add Broth 1 l gradually while stirring
  13. cook until it softens
  14. in the meantime add Broth 1 little bit if needed enough to cover
  15. add Beetroot while stirring
  16. cook until liquid absorbed
  17. add Butter 100 g
  18. put on it Feta 100 g cut into cubes/diced Chives 1 tbsp chopped when serving
