Ingredients

  • Butter 575 g room temperature
  • Sugar 200 g
  • Brown Sugar 135 g
  • Vanilla Extract 3 tsp
  • Egg 3 pc L size
  • Flour 280 g
  • Cocoa Powder 60 g
  • Baking Powder 1 tsp
  • Baking Soda 1 tsp
  • Salt 0.25 tsp
  • Water 120 ml hot
  • Sour Cream 240 ml
  • Powdered Sugar 625 g
  • Milk 2 tbsp
  • Chocolate 200 g melted dark
  • Pomegranate Juice 180 ml
  • Gelatin 2 tsp powder
  • Sugar 2 tbsp
  • Pomegranate Seeds 200 g

Steps

    Sponge Cake

  1. add Butter 230 g room temperature Sugar 200 g Brown Sugar 135 g in large bowl
  2. mix with hand mixer until creamy
  3. add Vanilla Extract 2 tsp Egg 3 pc L size one by one while mixing
  4. mix Flour 280 g Cocoa Powder 60 g Baking Powder 1 tsp Baking Soda 1 tsp Salt 0.25 tsp in large bowl
  5. mix Dry Mix Egg Mix Water 120 ml hot carefully
  6. add Sour Cream 240 ml
  7. mix
  8. divide Dough in half
  9. put Dough half in baking form round 20 cm
  10. repeat
  11. bake 180 °C preheated 40 min until needle test in oven (top and bottom) one by one
  12. cool 10 min

    Filling

  1. whisk Butter 345 g room temperature in large bowl with mixer until creamy
  2. add Powdered Sugar 325 g
  3. whisk low until combined
  4. whisk medium 2 min
  5. add Powdered Sugar 300 g Milk 2 tbsp
  6. whisk low until combined
  7. whisk medium 2 min
  8. add Chocolate 200 g melted dark
  9. mix until combined

    Topping

  1. mix Pomegranate Juice 180 ml Vanilla Extract 1 tsp Gelatin 2 tsp powder in medium pot
  2. rest 1 min
  3. add Sugar 2 tbsp
  4. cook medium heat until it dissolves
  5. remove from heat
  6. cool in medium pot in ice bath until it thickens
  7. add Pomegranate Seeds 200 g
  8. rest in fridge

    Assembly

  1. take Sponge Cake 1 pc
  2. smear with Filling half leave some for decoration
  3. put on it Sponge Cake 1 pc
  4. smear with Filling half
  5. Cake side smear with Filling with rest
  6. Cake put on it Topping
